Chocolate granola - nut-free

4 cups large flake oats3/4 cup wheat germ1 tbsp. ground flax1 tbsp. flaxseed1/3 cup brown sugar, packed1 tsp. kosher salt1/4 tsp. cinnamon1/3 cup canola or other light vegetable oil1/4 cup honey or agave nectar2 tbsp. unsweetened cocoa2 tbsp. granulated sugar 1 tsp. vanilla
Preheat oven to 325 degrees.
In a large mixing bowl, add oats, wheat germ, flax seeds and ground flax, brown sugar, cinnamon and salt. Mix together.
In a small saucepan, add oil, honey or agave, cocoa and sugar. On medium heat, bring to a simmer, stirring occasionally. Once ingredients are mixed and the mixture is simmering, remove from heat and add vanilla. Pour over oats mixture.
Stir well and pour onto a baking sheet sprayed with Pam or otherwise greased.
Bake for 15 minutes, stir and then bake for another 15 minutes. Let cool on baking rack and then move to an airtight container. Granola keeps for a few weeks.
Makes about 18 servings, if each serving is 1/3 cup.
