Tomato/ sweet potato soup

4 cups plum tomatoes1 cup vegetable broth1 onion5 cloves garlic1 large sweet potatoe, peeled and chopped1 cup ground almonds
Place tomatoes and broth in a pot and bring to a boil, adding onion, sweet potato and garlic as they heat. Once the mixture boils, reduce heat to simmer for 10-15 minutes until potatoes are cooked through
Remove mixture from heat and allow to cool. Puree the cooked mixture in a blender when cooled.
