Lentil Tacos

Ingredients
1 tsp canola oil2/3cup finely chopped onion1 small clove garlic, minced2/3 cup dried lentils, rinsed1 Tbsp taco seasoning (can substitute no-salt version)1 2/3 cup reduced fat chicken broth/vegetable broth2/3 cup salsa*taco shells
Directions
Heat oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5min. Mix lentils and taco seasoning into onion mixture; cook and stir for 1min.
Cover lentils with chicken broth and bring to boil. Reduce heat to low; cover and simmer until lentils are tender, 25 to 30min.
Uncover and cook until mixture is slightly thickened, 6-8min. Mash lentils slightly; stir in salsa.
Serve about 1/4cup lentil mixture in each taco shell (shell not included in nutrition facts); top with lettuce tomato cheese.
