Double the recipe and have enough for four or leftovers for two the next day.
Preheat skillets, brown slices of tofu with mushroom (if the skillet is hot enough you don't need to add oil).
Brown other veggies in second skillet and toss with spicy sauce, cover and let steam while tofu browns in other skillet.
Combine all and serve.
Serving Size: One block of tofu can make 4 servings, the veggies can be adjusted according to cook's good instincts.
