Hollandaise Sauce (paleo)

Ingredients
3 egg yolks1/4 cup melted ghee +/- regular olive oil (blended)2 teaspoons apple cider vinegar1/4 teaspoon salt1/8 teaspoon paprika, or cayenne if you like a little heat2 tsp water
Directions
1.In a small sauce pan, over low heat, whisk egg yolks and water until smooth and creamy. Add more water (1T. at a time), if needed.
2.While whisking, stream in oil.
3.Add sea salt and lemon juice, to taste.
4.If the hollandaise begins to separate, add more water and whisk.
