Coconut - Lime "Butter"Cream

1/4 cup shortening 1/4 cup margarine, softened zest of 1 small lime2 cups powdered sugar, sifted2 tablespoons coconut milk
Cream margarine with electric mixer. Add lime zest.
Gradually add sugar, beating well on medium speed.
Add coconut milk and beat until light and fluffy.
Keep bowl covered with a damp cloth until ready to use.
Refrigerated in an airtight container, this icing can be stored 2-3 weeks.
