Ingredients

    2 Cups Black Rice (soaked in 4 cups of water 3 hours or over night
    2 quarts water
    1/2 cup palm sugar

Directions

1. In a heavy stock pot, add in the rice with the water and bring the water to a boil over high heat, then reduce to low heat.
2. Allow it to simmer with no lid, checking the water level and stirring it from time to time for 1-2 hours until the rice is tender. Add in the palm or sugar to the rice.
3. Ladle rice pudding into bowl and drizzle 1 Tbs. coconut syrup on top.
