Salsa

Ingredients
2 cans diced tomatoes, preferably no salt added2 cans Ro-Tel tomatoes, I use 1 can original and 1 can mildHandful of cilantro2 green onions, sliced2 Tbsp. (or more) lemon juiceSalt and Pepper to taste
Directions
Add all 4 cans of tomatoes, about a handful of cilantro, chopped green onions, lemon juice, S & P to a bowl. With an immersion blender (or in a food processor or blender) blend until almost smooth. Refrigerate for about an hour. Serve with tortilla chips, on salad, just about anything.

Serving Size: Makes about a quart of salsa
