Quinoa, Black bean, & corn salad

2½ cups cooked quinoa (see page 6) 3 ears corn, kernels removed (about 2 cups) 1 red bell pepper, diced ½ small red onion, peeled and diced One 15-ounce can black beans, drained and rinsed 1 cup cilantro, finely chopped 6 green onions, thinly sliced 1 jalapeño pepper, minced Zest of 1 lime and juice of 2 limes 1 teaspoon cuminSalt to taste
Combine all ingredients in a large bowl and mix well.
Chill for 1 hour before servi
