Blueberry Compote

Ingredients
2 cup Blueberries2 pear diced2 1/2 cup full fat Coconut Milk (used SILK brand)1 cup Chia Seed1TB Honey 2 teaspoon Cinnamon1 teaspoon Nutmegdash of ground Clovesother optional seasonings: cardamom, nutmeg, cloves
Directions
Place all ingredients in a sauce pan. Bring to a simmer for approx 20 minutes or until fruit is soft. Remove from heat and stir in Chia seeds. Stir constantly for 2-3 minutes to avoid clumps. Refrigerate for at least 4 hours.
Top each serving with slivered almonds (not in calorie count).

Serving Size: Makes 5 servings approx 1 cup each.
