16 ounces cooked chicken breast3 stalks celery, finely diced2 shallots, finely diced2 ounces shelled pistachio nuts, roughly ground1/3 cup fresh dill 8 ounces non fat Greek yogurt3 tbsp dijon mustard2 tbsp curry powder2 tsp cumin2 tsp smoked paprikasalt and pepper to taste
Easy peasy lunch - shred 1 pound of boneless skinless chicken breast (about 3 breasts from a package) into a medium mixing bowl. Add finely diced celery, shallots, pistachios, fresh dill, curry powder, cumin, and paprika, stirring to thoroughly combine. Add Greek yogurt and dijon mustard and stir until desired consistency is met.
