Shrimp Tostada with Hot Pepper Aioli

Ingredients
2 tsp olive oil1/4 corn, frozen1/4 cup onion, diced1 tsp garlic, minced fine3 oz cooked shrimp (if frozen, defrosted); chopped1/4 cup fresh cilantro, coarse chopped1 Tbs low fat mayo1/4 jalapeno or other hot pepper1 corn tortilla (about 6" diameter)1/4 cup lettuce, coarse chopped
Directions
Makes 1 serving - recipe easily multiplied.

Hot Pepper Aioli
Seed and mince hot pepper.
Add to mayo and set aside

Shrimp Mixture:
- Heat a skillet and add 1 tsp. olive oil.-
- Add frozen corn, and saute until defrosted, about 2 minutes.
- Add garlic and onion, saute until onion is clear and soft, 2-3 minutes
- Lower heat, add additional 1 tsp olive oil and then add chopped shrimp and cilantro. Saute for 2-3 minutes, until shrimp is heated through.

When shrimp mixture is almost done, warm up the tortilla. Heat a second skillet, and place the tortilla in it. Flip after about a minute and heat other side.

To Assemble:
Place tortilla on plate.
Spread with Hot Pepper Aioli (may not need the whole Tbs).
Sprinkle lettuce, then add shrimp mixture on top.

Serve with black beans (or other bean of your choice).
