3 tbsn cornstarch3 cups gran sugar1tsp cream of tartar1 1/2 cups egg whitespinch of salt3 tsp vanilla extract 1/2 cup of dried apricots
preheat oven 250 F
combine cornstarch and sugar in a bowl, mix
In a mixing bowl combine whites, cream of tartar beat till soft and it peaks
gradually sprinkle sugar and cornstarch and continue to beat till stiff and shiny
Once all the ingredients are incorporated add vanilla and beat to stiff peaks
On a sheet try lined with parchment paper using a spoon drop a half cup amount of meringue try to make mounds look similar
bake at 250 F till outside is hard but the inside resembles a marshmallow
