2 Yukon Gold Potatoes, peeled and diced1 large onion, chopped1 can chickpeas1 can diced tomatoes1/2 cup of vegetable broth4 cloves garlic, choppedPlenty of curryDash of red pepperDash of cilantroSalt, to taste
Bring onions, garlic, potatoes, and oil to medium heat in large pan
Cover and cook until potatoes start to get a little tender
Add spices (curry, red pepper, cilantro, salt)
Add chickpeas, diced tomatoes, and vegetable broth
Cook until heated through, add more spices to taste
Serving Size: Makes approximately four 1-cup servings
