Homemade Pancakes

2 c. Wheat Flour2 Eggs6 tbsp Organic Sugar3 tsp Baking Powder1/2 tsp Baking Soda2 tsp butter1.5 c Coconut Milk2 tsp Vanilla
In a mixing bowl take a sifter and insert flour. (I like to enter all dry ingredients to get a good mix started) Sift until all gone into bowl. Add all other dry ingredients. Add butter, eggs and coconut milk and mix. If still think or dough like add more milk or water. When thoroughly mixed add in 2 tsp vanilla, mix well and let sit for 2 minutes.
In a medium frying pan add oil/butter to pan a cover surface. Take a tablespoon or dipping spoon smaller than a soup ladle and scoop 6 spoonfuls of the mixture into the center of the pan. Let cook until top has bubbles and is less watery, flip to other side until cooked. Remove and repeat until mixture is all gone.
Should warrant 6-8 pancakes, more or less depending on how big/small you like your pancakes.
