Ingredients
6 eggs1/2 onion chopped (about 1/2 cup)1/2 green pepper chopped (about 1/2 cup)Can Delmonte whole potatoes cut into bite sized pieces.1 tsp olive oil
Directions
cut up all the veggies into bite sized pieces. Heat the Olive oil in skillet, put in all ingredients except egg and cook 'til tender. Scramble the 6 eggs with a little water, and pour into pan with veggies. Scramble together. Quick and easy! I added a little southwest cajun seasoning to spice it up! Divide into 4 equal servings
