Peanut Butter Blondies

Ingredients
4 Egg Whites1 cup PB21/2 cup Brown Baking Sweetener (Ideal/Xylitol)1/3 cup Almond Milk (unsweetened)1/2 tsp Apple Cider Vinegar1/2 cup Applesauce (unsweetened)3/4 tsp Baking Powder3/4 tsp Vanilla Extract1/2 cup Vanilla Protein Powder
Directions
Preheat oven to 350° line an 11" x 7" baking pan w/parchment foil or spray w/non-stick spray. Combine almond milk and vinegar in small bowl and stir. In another small bowl, mix all dry ingredients (PB2, sweetener, baking powder, protein powder) and set aside. Beat egg whites by hand for 30 seconds in medium bowl. Add almond milk mixture, applesauce, and vanilla and mix thoroughly. Slowly add dry ingredients and whisk until well combined. Bake for 35-40 minutes in preheated oven (until a toothpick comes out clean). Store in refrigerator.

Serving Size: Makes 24 blondies.

    Followed the directions exactly, except for placing in individual loaf tins instead of the 11x7 pan recommended. Glad I did because the consistency after baking is very bread-like. I got 24 servings, but the serving size is very small. 40 cal per serving according to MFP. - 12/16/16
