Cheesy Baked Cauliflower (Mock Twice Baked Potatoes)

1 Large Head Cauliflower, raw, broken into flowerettes, and steamed approx. 11 min until just tender through the thickest parts4 oz. Cream Cheese1/4 tsp Garlic powder1/4 - 1/2 tsp Onion powderSalt & Black Pepper to taste1 - 2 Cups Shredded Cheddar CheeseApprox 4 tsps. Bacon Bits (oscar mayer real bacon bits, not Bacos)
1. Put cauliflower into food processor** with cream cheese, garlic powder, onion powder, and salt & pepper and blend until well mixed (you can do this while cauliflower is still hot)2. Transfer cauliflower into a mixing bowl and fold in bacon bits and 2/3 of the cheddar cheese.
4. Transfer to a well-greased baking dish and top with remaining cheese.
5.Bake in oven at 350 degrees until cheese is melted throughout (usually about 20-30 min). This step may also be done in the microwave. I make the dish ahead of time and refrigerate before baking until needed. I bake it just before serving.
**If you don’t have a food processor, put the steamed cauliflower in a mixing bowl and use a potato ricer to mash up. It doesn’t have to be perfectly smooth, but lumps should be very small. Then add the cream cheese and with the ricing tool incorporate it into the cauliflower.
Serving Size: 8 3/4 cup servings
