Spinach Rice Casserole

1c brown rice1 medium onion3 cloves garlicsunflower seeds2c cheddar cheese1lb fresh spinach2 eggs1/2 c milk
1) Cook brown rice covered on low for 40 mins
2) Saute onions and garlic 5 minutes. Add 1lb fresh spinach to pan, cook another 5 minutes.
3) Combine eggs, milk, rice, spinach mixture, cheese, and half of the sunflower seeds. Mix well, pour into deep casserole dish.
4) Add remaining sunflower seeds on top as garnish. Bake at 350F for 35-40 minutes uncovered.
Serving Size: Makes 6-8 servings
