Ingredients
Directions
Half of one pepper and one lemon, jar of artichokes (drained of fat and marinade) , fresh greens, boiled great northern beans (dont use a can or this recipe will be too salty).Mayo optional
You will need a nutribullet or extractor to make this soup silken. If you juice, you will lose the nutrients and fiber.
peel and lemon and pit one half.
Drain a small 6oz jar of artichokes. Put everything in the large nutribullet jar, adding water to subsequent pulses as space allows. I let this one extract for a good 120 seconds.
The beans mellow the sour of the lemon and marinade, and yet, there is still a tartness. Heating the soup should be very minimal.
Cooking is optional. I drink mine chilled like gazpacho, but lightly heated is yummy too. For a texture change, reserved the beans from the extraction and pour the heated soup over the beans, to give more texture.
