Asian Beef Lettuce Cups

Ingredients
1 head butter lettuce 1 lb lean ground beef (used Kirkland Organic 85/15)1 C cooked rice2 T grated ginger1/2 C chopped green onion2 cloves garlic, minced2 T soy sauce1/4 C Hoisin sauce1 C shredded carrotpinch red pepper flakes1/4 C chopped cashews
Directions
Brown the beef over medium heat. Add the rice, ginger, green onions, garlic, soy sauce, hoisin sauce, red pepper flakes, carrots & cashews, stir and cook 1-2 minutes to heat through.

Spoon beef mixture into lettuce cups and serve.
