Eggplant Fries

Ingredients
2 Eggplants, peeled1/2 cup flourSpices of your choice: Herbs de Provence, Italian combinations, basil, rosemary, thyme, sage, cilantro*Oil to fry
Directions
Cut up eggplant into strips.
Mix the flour and spices, drench the eggplant.
Heat the oil until a slight boil begins around a spoon.
Fry the eggplant until brown. Let cool and serve with marinara or BBQ sauce.
