Cinnamon Vanilla Bran Muffins

Ingredients
1.5 c. All Bran Original cereal1 c. buttermilk (lowfat)1/3 c. unsweetened applesauce2 egg whites2/3 c. brown sugar1 t. vanilla (pure vanilla recommended)1/2 c. all-purpose flour1/2 c. whole wheat flour1 t. baking soda1 t. baking powder1 t. cinnamon
Directions
Preheat oven to 375 degrees. Grease muffin cups.

Mix together bran buds and buttermilk and soak for 10 minutes.

Beat together applesauce, egg whites, sugar and vanilla in large bowl. Add bran mixture. Combine flour, baking soda, baking powder and cinnamon. Stir flour mixture into buttermilk mixture, until blended.

Pour into greased muffin cups.

Bake for 15 to 20 minutes. Yields 12 regular size muffins.
