Mushroom Soup

Ingredients
1 Tbs EVOO1 Shallot1 leek20 oz mushrooms (mixed any type- I like to use crimini, white and portobellas)reserve 4 oz mushroom1 clove garlic1 tsp thyme1/2 tsp sagesalt6 cups vege broth1/4 cup rice
Directions
Saute chopped leeks and shallot - until tender
add 15 oz mushrooms - saute until mushrooms sweat and release juices
add minced garlic and herbs
add rice and broth - bring to boil, then lower heat, cover and simmer until rice is done about 20 minutes.

When rice is done, blend soup In batches - return to pot..add remaining 5 oz of mushrooms and cook until those are done...serve
