Brioche french toast with blueberry sauce

Ingredients
French toast2 thin slices of brioche bread1 egg2 tablespoons of semi-skimmed milk1/2 teaspoon of vanilla essenceBlueberry sauce1/4 cup of blueberriesJuice from 1/2 a lemon1 tablespoon of caster sugar
Directions
1. To make the french toast; mix together the egg, milk and vanilla essence. Dip the brioche in the egg making sure it is fully covered in the egg mix, the fry in a non-stick frying pan on medium heat.

2. For the blueberry sauce, mix all the ingredients together in a pan stirring occasionally until it is thick and jammy.

Serving Size: Two slices of french toast and 1/3 cup of blueberry sauce
