CCC muffins (Cauliflower, Chia, Corn muffins)

Ingredients
1 box of Jiffy corn mix1 egg1/3 cup milk1 Tbsp Chia seeds1/2 cup boiled cauliflower
Directions
Pre-heat the oven to 400 F
Boil cauliflower in water without any addition for 12-15 mins.
Make muffins according to instruction on packet. (Add first four ingredients together and mix)
Finally add cauliflower mashed into small pieces.
Pour the mix into muffin tray and bake for 15-20 mins.
Voila, delicious corn muffins infused with some extra protein and fiber is ready for you!
