Gluten free zucchini muffins

Ingredients
1 1/4 cups of Pamela's Baking Mix1 large egg1/4 cup of sugar1/2 cup of zucchini (shredded)1 tsp vanilla extract1/4 cup of water1 T. canola oil
Directions
Mix all ingredients and use the batter to fill greased muffin tins approximately 2/3 full. Bake for 18 minutes at 350 degrees.
