Potato Leek Cake Mix

1 lb baking potatoes.25 tsp saltPinch black pepper1 egg, lightly beaten.25 cup leeks, finely chopped, sauteed in butter2 tbsp butter
Bring water to a boil in large stockpot. Add potatoes and boil for 15 min. Remove from heat and allow to rest for 10 min.
Drain potatoes under slowly running cool water for 10 min. Refrigerate for 30 min.
Peel cooled potatoes and shred into large bowl. Season with salt and pepper. Add beaten eggs and leek; stir gently. Shape into 4 patties.
Heat butter in skillet; saute patties over medium heat until golden, approximately 3 to 4 minutes.
Serving Size: makes 4 cakes
