Crustless Bite-sized Mini Quiche with Kale & Feta

Ingredients
1 small onion, chopped10-12 oz frozen kale, thawed and drained6 eggs.75 cup unsweetened almond milk.5 cup flour1 tbsp (heaping) ground flaxseed.5 cup crumbled fetaSpice and season to taste (such as salt, black pepper, cayenne pepper, thyme, etc.)
Directions
Preheat oven to 350 degrees. Spray mini-muffin pans with non-stick cooking spray. Saute onion until tender. Mix with kale and set aside. In a medium bowl, combine eggs and almond milk. Add flour, flaxseed, and any spices. Stir in kale mixture. Spoon into mini-muffin pans. Garnish with a sprinkling of feta on top. Bake roughly 20 minutes or until tops are lightly golden and inserted knife comes out clean.

Serving Size: Makes roughly 40 bite-sized quiche
