Beef Fried Rice

Ingredients
3 cups white rice, cooked (leftover rice works well)6 oz John Soules Beef Fajita Strips2 eggs1 cup frozen mixed vegetables (peas, carrots, beans & corn)1/4 tsp ground ginger1/8 tsp curry powder1/8 tsp garlic powder2 Tbsp extra light olive oil2tsp sesame oil4 Tbsp Kikkoman Lite Soy Sauce
Directions
Break eggs into hot skillet or wok & stir quickly to scramble.

Add beef strips & cook for 3-4 minutes.

Add frozen mixed vegetables, ginger, curry powder & garlic powder, stir well & allow to cook until vegetables are no longer frozen.

Add rice, olive oil & sesame oil, stir fry for 3-4 minutes until rice is heated through.

Add Soy Sauce, stir fry for another minute or two to mix flavor throughout rice mixture.

Serving Size: makes 4 servings
