Green Soup

2 tbs olive oil2 chopped yellow onions1 tsp salt1/4 cup brown rice1 lb greens-I like kale12 oz spinach4 cups vegetable broth1 tbs lemon juice
Heat oil in large skillet, add onions and 1/4 tps salt about 5 mins. Reduce heat to low, add 2 tbs water and cover about 25 mins.
In another pan combine 3 cups of water, remaining salt and rice. Bring to boil, reduce and simmer 15 mins.
Trim and chop greens, after the 15 mins, stir them into rice, cover and cook 10 mins.
Add onions and broth to pan, simmer 5 more mins.
Puree soup in blender and add lemon
