Ginger Red Pear-Banana Cake (guten free and vegan)

3 ripe baby bananas (or 1.5 regular ones)1 T. coconut oil, melted1/2 c. unsweetened applesauce6 T. of raw agave nectar1 tsp vanilla extract1 c. oat flour1/2 tsp baking soda1 tsp cinnamon1/2 tsp nutmeg1/2 tsp ground ginger2 tsp of grated ginger1/2 tsp sea salt1 D'anjou red pear, diced5 pieces of crystallized ginger
Preheat oven to 350. Spray an 8X8 pan.
In lg bowl, mash the bananas well. Mix in the oil, applesauce, agave and vanilla with a whisk.
Mix together the dry ingredients and then incorporate into the wet with a whisk.
Fold in diced pear, grated ginger and crystallized ginger.
Pour batter into pan and spread evenly with a spatula.
Bake for 30 minutes.
Cool completely on rack.
