Indian Style Lentils

Ingredients
Indian Style Lentils2 ½ cups dried lentil (brown and red)4 lbs of Chicken broth (2 2lb cartons)1 onion3 garlic cloves1 c orange bell pepper chopped1 c onion chopped1 c chopped celery4 tsp Madras Curry½ tsp cumin½ tsp coriander1 packet of Sazon Goya (coriander and annatto)1 Chicken Bouillon (Herbox) packet1 ½ tsp salt1 ½ tbsp oil1 can Rotel diced tomato with habanero
Directions
Directions:
Rinse and clean lentils.

Sautee onions, pepper, and celery in 1 ½ tbsp veggie oil or olive oil. Add ½ tsp salt. Add the seasonings to the veggie mix and stir on high for 30-60 seconds. Add rinsed lentils. Mix well with the seasonings. Add chicken stock and rest of salt. Cook 50-75 minutes until beans are tender. Enjoy.
