Spanish Style White Bean and Vegetable Soup

1 medium onion, chopped1/2c chopped sun-dried tomatoes in olive oil3/4c chopped carrotssalt and pepper to taste1T smoked paprika (or to taste)1 can white cannellini beans, rinsed and drained4 cups chicken broth1/4c fresh chopped oregano3/4c frozen peas1/2c frozen chopped kale
Saute onion, tomatoes and carrots until slightly soft. Add beans, smoked paprika, chicken broth, and salt and pepper. Simmer for 20-25 minutes. Add oregano and puree with an immersion blender. Add peas and kale and simmer for 5 minutes or until kale is soft. Let cool and serve.
