Introduction

Ingredients

    2 T. Olive oil
    1 C. Dry quinoa
    1 Medium onion, chopped
    3 Gloves garlic, chopped
    1 Green pepper, chopped
    1 Can diced tomatoes with liquid
    2 1/2 C. water
    1 tsp. Chili powder
    1/4 tsp. Garlic powder
    1/2 tsp. Ground cumin

Directions

Heat oil in a large sauce pan over medium-high hear. Add quinoa, onion, garlic, and peppers and cook, stirring 5-10 minutes, until the onions are translucent and the quinoa is toasted.

Stir in tomatoes, water, and spices and bring to a boil. Cover, reduce heat to low, and simmer until the quinoa is tender and the liquid is absorbed, stirring occassionally, approximately 30 minutes.
