Ingredients

    1 whole green (Bell) pepper
    1/2 cup brown rice
    1/2 cup canned black beans
    1/5 cup canned yellow corn
    2 tbls. chunky salsa
    2 tbls. enchilada sauce
    1 tbls. reduced fat sour cream

Directions

Mix together the cooked rice, beans, corn, salsa, and enchilada sauce. Cut the stem and core out of the whole pepper, making sure all seeds are removed. Stuff the mixed ingredients in the top of the pepper. Place in microwavable bowl and cover with 2 layers of clear wrap. Cook for 12 min. at level 7 power (or 3/4 power). Let stand for 3 min. Serve with a dollup of sour cream on top.
