Thai Papaya Salad - Som Tum

The meal is quite simple to make. The main ingredients are shredded green papaya, chopped green beans, tomoato, dried prawns, unsalted roasted peanuts, chillies, garlic and lime juice. These are all pounded together in a mortar using a pestle.
The papaya salad is best served with sticky rice (khao neow) and grilled chicken.

Great smoothie for breakfast or a snack. Each serving of smoothie gives you about 4 servings of fruit. Great substitute for the smoothies you can get at fast food places that are filled with sugar and fat. I buy the fruit in the summer when it's less expensive, cube it, and freeze it to have during the winter months. Make sure to thaw the fruit, at least most of the way, before blending or it can clog the blender.

Although these contain approximately 200 calories each, they are an all natural granola bar, rich in omega-3 fatty acid with 4 grams of fiber and 4 grams of protein. To save on some calories, you can make this without the ground flaxseed meal and almonds to make each bar approximately 150-160 calories each. If you don't have the dried fruit and nut mixutre, you can just use any kind of dried fruit - raisins, craisins, prunes (chopped), mangoes (chopped), papaya... you get the idea
