Single Serve Leftover Pork Chop Pita
I came upon this concoction when I wanted a healthier alternative to the standard tacos my family was eating one night. I wanted something similar (don't want to feel like an outsider at my own dinner table) and only could use what I already had in my kitchen. This included leftover grilled pork chops. It was so good and satisfying, I had it the next day again (now I'm out of pork chops). Honestly, if you want to cut more carbs/calories, try it without the pita. It will be good, I promise. Also experiment with adding onion, cilantro and tomato. I plan on doing that some day.
