Ingredients

    1/2 cup egg beaters
    2 large eggs
    .25 cup skim milk
    .25 large red onion chopped
    6oz diced center cut pork loin trimmed of all visible fat
    .5 tsp salt
    .25 tsp pepper
    cooking spray

Directions

Saute Onion in a pan over med heat with a bit of non-stick spray. toss in diced pork, stir and remove from heat. Put eggs and egg beaters into a large bowl, add milk, salt and pepper. Stir to combine. Preheat oven to 350 degrees. Spray a 12 cup muffin tin with nonstick spray. Divide onion & pork among cups, pour in egg mixture to cover. Bake for 10-15 minutes or until eggs look just barely set. Be careful not to overcook.

Serve with fruit, toast, shredded cheese, salad, whatever you like!
