Ingredients

    1 lg green pepper chopped into large chunks
    1 lg red pepper chopped into large chunks
    1 lg yellow pepper chopped into large chunks
    1 lg onion chopped into large chunks
    3 cloves garlic, minced
    6-8 servings leftover roast pork tenderloin, cubed
    Olive Oil - 5 tbsp
    Soya Sauce to taste
    Salt and pepper, to taste



Directions

Cut the peppers and onion into large chunks. Heat the oil in a very large skillet on medium-high. Add the peppers, onion, garlic and pork. Stir-fry until everything is nicely browned. Season to taste.
