Introduction
I came upon this concoction when I wanted a healthier alternative to the standard tacos my family was eating one night. I wanted something similar (don't want to feel like an outsider at my own dinner table) and only could use what I already had in my kitchen. This included leftover grilled pork chops. It was so good and satisfying, I had it the next day again (now I'm out of pork chops). Honestly, if you want to cut more carbs/calories, try it without the pita. It will be good, I promise. Also experiment with adding onion, cilantro and tomato. I plan on doing that some day. Ingredients

2 oz - leftover pork chops cubed - (I'm sure someone could find a way to create the same thing with a raw pork chop, if leftovers aren't available)
1-2 tbsp of taco seasoning (to taste)- I used Penzey's Bold Taco Seasoning for that extra kick
1/4 c (or so) of water
1/2 medium Hass avocado - cubed
1 oz of fresh Mozzarella - cubed
1 serving of Brown Berry Pocket Thins (100 cal)
Tips
- Try adding other ingredients like cilantro, corn, onion and tomato
- Increase amounts to share with the whole family and friends. Seriously, my son saw what I was eating and he told me it looked sooooo good. I will make it for him one day.
Directions
1.) cut leftover pork chop into cubes until you have 2 oz (yes, I keep a food scale in my kitchen, but this will be about 2/3rds of a bone in pork chop)
2.) Cube Avacado and Mozzarella
3.) Re-heat porkchop w/ taco seasoning on a small dry skillet over medium heat (If you are using a raw pork chop, brown and then add seasoning). Stirring often
4.) add Water as needed. Stir often until you have a saucy paste surrounding pork chop.
5.) Mix pork chop with avocado and mozzarella, letting the seasoning blend with the other ingredients. Stuff pita.
6.) Enjoy. Please enjoy. This is the most important step. All other steps are pointless if you don't stop, and just enjoy the food you are eating.
Serving Size: 1 Single Serve Pita Sandwich (with maybe a little leftover filling)
