Broccoli Cheddar Soup (Keto-3.7 net carbs per serving)

-2 tsp. salt-3 cups chicken broth (or veggie)-1/2 large onion, chopped-3 small-med heads of broccoli, chopped into florets-1 avocado, roughly chopped-1 cup shredded cheddar cheese-3 cups heavy whipping cream
In a large pot, combine broth, salt, onion, broccoli and bring to a low boil. Lower heat, cover, and simmer for 15 minutes or until the broccoli is nice and soft.
Put the contents of the pot plus the avocado in a big blender of food processor and slightly blend it, or thoroughly puree (depending on how chunky you like it.)
Return to the pot on medium heat, stir in the cheese and heavy cream, bring it back up to a low boil. Simmer for another 10 minutes or so, stirring regularly.
Serving Size: 10
