3 sweet potatoes2 turnips3 leeks (white part only)3 cans reduced sodium fat free chicken broth3 stalks celery200 g carrots1 c. edamame1.5 lb boneless skinless chicken breasts
Trim all visible fat from chicken and cut into 1 inch cubes. Using cooking spray, brown chicken. Clean and pare vegetables, except edamame, into cubes. Place all ingredients into soup pot and simmer until chicken and vegetables are tender.
