2 cups old fashioned oatmeal1 cup sliced almonds1 cup shredded coconut, loosely packed1/2 cup wheat germ3 Tbsp unsalted butter2/3 cup honey1/4 cup light brown sugar, lightly packed1 1/2 tsp pure vanilla extract1/4 tsp salt1/2 cup chopped pitted dates1/2 cup chopped dried apricots1/2 cup dried cranberries
Preheat oven to 350 degrees. Spray 9x13 inch pan with oil. Place parchment paper to fit pan. Toss the oatmeal, almonds, coconut, and wheat germ into baking sheet and bake for 10-12 minutes, stirring occasionally until browned. Transfer to a large mixing bowl and reduce the oven temperature to 300 degrees.
Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over toasted oatmeal mixture. Add the dried fruit and stir well.
Bake for 25-30 min. until light golden brown. Cool for at least 2-3 hours before cutting into squares. Serve at room temperature.
