Chicken Rollatini w/Spinach alla Parmigiana (Seymour)

Ingredients
6 chicken breasts, 6 oz. each1/4 c. Bread crumbs1/4 c. Shredded Parmesan cheese2 egg whites5 oz. frozen spinach, cooked and drained10 T Ricotta cheese6 oz. shredded mozzarella cheese, divided1.5 c. Primavera pasta sauceSalt and pepper to taste
Directions
Preheat oven to 450 degrees.

Place chiicken breasts in baking dish sprayed with non-stick cooking spray. Season chicken with salt & pepper.

In a bowl, combine 2oz. Mozzarella cheese, Parmesan cheese, spinach, egg whites, and ricotta cheese.

Evenly distribute cheese mixture over top of each breast. Loosely roll each breast, keeping seam side down.

Spray each breast with cooking spray and sprinkle with bread crumbs until well coated.

Bake 25 minutes or until done. Remove from oven, top with primavera sauce and remaining mozzarella cheese. Bake until cheese is melted.

Serve with your favorite pasta (not included in nutritional facts).
