Ingredients
1 Tbsp olive oil1 c chopped onions3/4 c + 2 Tbsp yellow cornmeal2 tsp chili powder1.25 c milk (1%)1 lb can black beans, rinsed & drained (10 oz beans)1 lb can corn, rinsed1 lb can stewed tomatoes4 oz can chopped green chiles, drained1/4 c shredded lowfat Cheddar cheese (1 oz)
Directions
Makes 6 servings

Preheat oven to 350
Oil an 8-in square baking pan (spray Pam)
In large bowl combine all but cheese and mix
Place in prepared pan and top with cheese
Baked, uncovered, 50 min.
Yummy and easy!

    The onions were a little overpoweing. Mine did not get completely done. Next time I will chop them finer and maybe not quite as many. We also thought it needed a little something more. I will try to tweak it a little. - 1/12/09

    This is good, but I may try adding a touch of sugar to give it a little sweetness... I like the chiles and spice; it gives it a litle kick. - 7/1/08

    This is a great recipe!! Not only do you probably have all the ingredients already in your cupboard, the recipe is SUPER easy and very filling. I served it with a rice side dish and it was awesome! I will definately be making this again! A true comfort food! - 5/20/08
