Pumpkin chocolate chip muffins

Ingredients
3 cups sugar15 oz can pumpkin1 cup vegetable oil2/3 cup water4 lrg. eggs3 1/2 cups flour1 TBSP cinnamon1 TBSP nutmeg2 tsp baking soda1 1/2 tsp salt1 cup chocolate chips
Directions
pre heat oven 350
makes 32 regular size muffins
or 24 regular and 24 mini
or 96 mini muffins*
-Mix sugar, pumpkin, oil, water and eggs till well blended.
-In separate bowl sift together flour, cinnamon, nutmeg, baking soda and salt.
-Gradually add dry mixture to the wet mixture just until well incorporated. then add chocolate chips
-Bake for 25-30 minutes or until toothpick comes out clean.
-for mini muffins bake for 15 minutes or until middle is set.
*3 mini muffins are equivalent to 1 regular muffin

    Absolutely, one of the best pumpkin recipes I have ever had. Yeah, there might be a lot of calories in it, but if your going to have sweets you might as well enjoy it!! Thanks SPAMEROO for sharing!! DELICIOUS, and definitely will make again...my children loved it! - 3/12/08
