Fruity Curried Chicken

Pam cooking spray2 skinless chicken breasts, cut into large chunks1 apple, diced2 pear, diced1 onion, diced1/2 jalapeno pepper2 tsp of ginger, chopped1/2 cup of cashews2 tsp curry powder1 tsp of cumin1/2 tsp of salt (to taste)1/2 cup of low sodium chicken broth1/2 cup of fresh or frozen cranberries
Spritz large pot with Pam or cooking spray, heat over medium and add fruit (except cranberries), onion, pepper, gingerm cashews, curry powder, cumin and salt. Cook til softened about 5-7 minutes. Add broth, crannberries and mix well. Add chicken and spoon some of the mixture on top. Cover post and reduce heat to medium low. simmer for 15mintues or until chicken is no longer pink inside. Turn chicken over once halfway through cooking.
