Slow Cooker Potato Soup

Ingredients
6-10 potatoes (depending on family size), peeled & cut into bite size pieces, if not mashing2 onions, chopped (1T minced)3-5 baby carrots, sliced1 stalk celery (optional)4-5 chicken bouillion cubes1 Tbsp. parsley flakes5-7 c. water1/2 Tbsp saltpepper to taste1/3 c. margarine

Put all the ingredients into the crock pot (need at least a 5qt crock pot for this recipe, but I use a 6qt crock pot) except for the evap milk. Cover & cook on low for 10-12 hrs or high 3-4 hrs (I usually do it on high for about 5 hrs). Stir in evap milk during last hour. If desired, mash potatoes before serving. If using 2 qt crock pot, reduce recipe by half.
