Mushroom and Spinach Dinner Quiche

Crust:1 cup of flour3 tbs Crisco. 1/4 cup water Filling:6 large eggs3/4 cup fat free half and half1 1/2 cups fresh spinach1 1/2 cups sliced fresh mushrooms1/2 cup diced onions1 ounce of cheddar cheese sliced.
Mix flour, crisco and water together with a fork or pastry knife and pat into a deep dish pie baking dish. Bake the shell at 350 for about 10 minutes while mixing the filling.
Sautee vegetables in a non stick pan on the stove until cooked down. If water exists at the bottom of pan, drain. Pour and spread into baked pie shell. Dot with slices of cheese. Whip eggs and milk with a hand whisk and pour over vegetables. Bake at 350 for about 35-40 minutes.
Serving Size: Makes 8 thick pie shaped slices of quiche.
